Resumen
El presente reporte de caso se desarrolló en el marco de la carrera Licenciatura en Administración de la Universidad Siglo 21. Tiene como objetivo aplicar la planificación estratégica en el restaurante La Jirafa, Grupo Meta, unidad de negocio perteneciente a Sauco S.A. Se identificaron factores que limitan la rentabilidad del restaurante, especialmente fuera de temporada.
Se propuso una estrategia de desarrollo de mercado orientada a captar nuevos segmentos de clientes mediante tres ejes: incorporación de menús veganos y vegetarianos, canal de ventas por delivery y la instalación de una unidad express en formato contenedor en zonas turísticas. A través del análisis financiero y evaluación de viabilidad, se buscó demostrar que la propuesta no solo es factible, sino que contribuye al posicionamiento estratégico y a la sostenibilidad del proyecto a llevar a cabo.
This case report was developed within the framework of the Bachelor's Degree in Business Administration program at Siglo 21 University. Its objective is to apply strategic planning to the La Jirafa restaurant, part of Grupo Meta, a business unit belonging to Sauco S.A. Factors limiting the restaurant's profitability were identified, especially during off-season periods. A market development strategy was proposed, aimed at attracting new customer segments through three axes: the incorporation of vegan and vegetarian menus, a delivery sales channel, and the installation of a container-style express unit in tourist areas. Through financial analysis and a feasibility assessment, the objective was to demonstrate that the proposal is not only feasible but also contributes to the strategic positioning and sustainability of the project.
